I am forever on the hunt for sweet treats that are not packed full of butter/sugar/syrup (all the good stuff basically!) that also don’t compromise at all on taste. I have such a bad sweet tooth so can be pretty hard to please in this department. However, these vegan chocolate banana bites pass the test, in fact they exceeded all my expectations and now I can’t live without a stash in the freezer. They are delicious, cheap to make, easy to make, fast to make and best of all kind of good for you!
Ingredients – All you need are two/three bananas (depending on how much you want to make) a large bar of dark chocolate (approx 100g) and one tablespoon of coconut oil.
Method – Start by peeling then chopping up the bananas into discs about 1cm thick. Place on a tray covered in baking paper and then leave in the freezer until frozen. Melt the chocolate and coconut oil in a bowl. Using a fork, dunk the frozen pieces of banana into the chocolate, completely covering each piece and then place back on the tray. When all bites are covered in chocolate place the tray in the freezer letting the chocolate freeze. Easy peasy, hope you enjoy!
FYI, you have to store the chocolate banana bites in the freezer because if you move them into the fridge (which is what I did the first time I made them) the banana will melt inside the chocolate and it gets messy!
